Excellent fruit bread great in fall and winter. Best if warmed for 5 - 10 seconds in the microwave when served.

Recipe Ingredients for Apple-Banana Bread

4 apples, baking
3 bananas, ripe
1/2 cup butter, softened
2 cups sugar, granulated
2 eggs
3 cups flour
1/2 tsp salt
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp vanilla

Recipe Directions for Apple-Banana Bread

  1. Core, peel apples. Chop into very small pieces. Or shred in food processor.

  2. Mash bananas. Combine with apples.

  3. In a separate bowl; cream butter. Gradually add sugar mixing well. Add eggs mixing one at a time. Stir in apple-banana mixture.

  4. Mix dry ingredients the stir into above. Add vanilla.

  5. Spoon into 2 greased loaf pans (8x5x3 inches)

  6. Bake at 325 degrees for 1 hour or until toothpick comes out clean. Cool on wire rack. Do not slice until ready to serve. Makes about 16 half inch slices.
