Apple Banana Blueberry Bran muffins - low fat, low calorie, dairy-free

Recipe Ingredients for Apple Banana Blueberry Bran muffins

1 1/2 cups whole wheat flour
1 cup oat bran
2 3/5 ounces dark brown sugar
2 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 tsp nutmeg
1/4 tsp cinnamon
2 ounces golden flax seeds
1 large egg
8 fl oz unsweetened almond milk
2 large bananas
2/3 cup unsweetened apple sauce
1 1/2 cups chopped apples
1 cup frozen blueberries

Recipe Directions for Apple Banana Blueberry Bran muffins

  1. Combine mashed bananas and sugar, then add egg, milk and apple sauce. Blend until smooth.

  2. In separate bowl combine flour, oat bran, salt, baking powder, baking soda, nutmeg, cinnamon, and flax seets. Gradually add flour mixture to banana mixture and stir until batter is uniformly moist.

  3. Add blueberries and chopped apples.

  4. Bake in muffin tins sprayed with non-stick spray at 375 degrees for 25-30 minutes. Cool muffins on rack for 10 minutes.
