Apple Bacon pancakes with cider syrup

Recipe Ingredients for Apple Bacon pancakes with cider syrup

1/2 cup apple cider
2 tablespoons light brown sugar
1 1/2 teaspoons lemon juice
1 1/2 teaspoons cornstarch
1/2 cup whole wheat pastry flour
2 tbsp whole wheat flour
1/4 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1 large egg
1 large egg white
1/2 cup nonfat buttermilk
1 medium apple
3 bacon

Recipe Directions for Apple Bacon pancakes with cider syrup

  1. mix apple cider, 1 tbsp sugar, lemon juice and cornstarch together in a small pan

  2. cook over med heat whisking till thick

  3. mix dry ingredients together set aside

  4. mix wet ingredients together

  5. mix dry ingredients into wet ingredients and add apple and bacon

  6. 1/4 cup = 1 pancake
