Sharp and fruity comfort pudding.

Recipe Ingredients for Apple & Apricot Rice Pudding

4 cups cooking apples
50 g dried apricots
3/4 cups basmati rice
1 tbsp cinnamon
1 tsp butter
3 tbsp sugar
2 cups water

Recipe Directions for Apple & Apricot Rice Pudding

  1. Peel, core and chop apples.

  2. Chop apricots.

  3. Add apples, apricots, sugar, cinnamon and water to a pan.

  4. Simmer on the hob for five minutes.

  5. Add rice and butter (pudding rice can be used if preferred).

  6. Bring back to the simmer.

  7. Stir.

  8. Cook for a minimum of fifteen minutes on a low heat (or put in a pre-heated oven on a medium heat for 20 minutes)

  9. Check every few minutes and give it a stir if sticking - if it gets too hot take off the heat, or too thick add extra water.

  10. Serve hot - lovely with a bit of cream or custard, but remember the calories!
