Recipe Ingredients for Aoife's Greek style samosas

53 g olives
70 g Feta cheese
25 g sunblush tomatoes
2 tbsp dill
80 g onion
2 cloves garlic
250 g spinach
2 tbsp lemon juice
270 g filo pastry
10 g Olive Oil

Recipe Directions for Aoife's Greek style samosas

  1. Cook the spinach in 2 tbsp water, and drain well

  2. Combine the feta, olives, tomatoes, onion, dill, garlic, and lemon juice in a food processor until well mixed but chunky.

  3. Add the drained spinach

  4. Take a sheet of filo pastry, brush with a olive oil, lay another on top, brush with oil, and repeat with a third sheet. Cut this into two rectangles.

  5. In the corner of one rectangle, place 2 tbsp of the spinach and feta mixture. Fold up into a triangular wrap. Repeat this process to make 8 samosas.

  6. Bake the samosas for 30 -40 mins at 190C.

  7. Serve with Tzatski style dip
