Recipe Ingredients for Aoife's creamy lemon coriander tuna curry

1 clove garlic
50 g onion chopped
1 tbsp olive oil
70 g zucchini
125 g veg stock cube
25 g chopped cilantro
80 g raw tuna
75 g l/f plain yoghurt
60 g lemon juice and zest
50 g uncooked rice

Recipe Directions for Aoife's creamy lemon coriander tuna curry

  1. spice mix - sorry too complicated to add to the recipe - 1tsp cumin seeds, 2 cardamon pods, 1 tsp turmeric, 1 tsp chilli powder

  2. fry the onion and garlic in the olie oil until translucent

  3. add the spice mix and cook for 2 minutes, adding water if anything sticks

  4. add the courgette or veg of your choice

  5. add half the coriander, the stock and enough water to cover the ingredients

  6. stir in the chopped tuna, add the lemon juiced and leave over a low heat for about 20 minutes.

  7. remove from the heat and stir in the yoghurt, the remaining coriander and the lemon zest

  8. season to taste and serve with basmatti rice (cooked!)
