very strong tasting pesto, so you only need a teaspoon full in a salad or with a serving of pasta

Recipe Ingredients for Aoife's basil pesto

50 g fresh basil leaves
40 g pine nuts
2 cloves garlic
30 g fresh parmesan cheese
50 g olive oil

Recipe Directions for Aoife's basil pesto

  1. toast the pine nuts on a dry pan

  2. combine the basil, olive oil and garlic in a food processer until smooth

  3. Add the pine nuts and combine again until smooth

  4. grate the parmesan and add to the mix and combine again for 30 seconds

  5. add pepper, salt will probably not be required

  6. I keep this frozen and add a teaspoon to pasta or salads
