Recipe Ingredients for ANZAC cookies

1 cup (250 mL) all-purpose flour
1 cup rolled oats
1 cup granulated sugar
3/4 cup (185 mL) shredded coconut
125 ml unsalted butter
1 tbsp honey
1 tsp (7 mL) baking soda
2 tbsp (30 mL) hot water

Recipe Directions for ANZAC cookies

  1. In medium bowl, sift flour. Stir in oats, sugar, coconut and salt.

  2. In small saucepan, combine butter and syrup or honey over medium heat. Stir until just melted. Transfer to large mixing bowl. In small bowl, mix baking soda and water. Stir into butter mixture. Gradually stir dry mix into wet until well blended.

  3. Line baking sheets with parchment paper.

  4. Place packed 1 tbsp (15 mL) of dough on trays 2 inches (5 cm) apart. Bake in batches in centre of preheated 300F (150C) oven until golden brown, 14 to 15 minutes. Cool completely.

  5. Store in airtight container at room temperature up to 1 week.
