From NPR's website (tweaked to remove butter and replace with applesauce).

Recipe Ingredients for Anzac Cookies

1 cup flour, sifted
1 cup rolled oats
1 cup coconut, desiccated and unsweetened
1 cup brown sugar
1/2 cup unsweetened applesauce
2 1/2 tablespoons honey
1 teaspoon baking soda
3 tablespoons boiling water

Recipe Directions for Anzac Cookies

  1. Heat oven to 350 degrees.

  2. Combine the flour, oats, coconut and sugar in a bowl.

  3. Melt the applesauce and honey in a saucepan over low heat.

  4. Mix the baking soda with the water and add to the applesauce and honey.

  5. Pour the liquids into the dry ingredients and mix well. Mixing is most easily done with your hands.

  6. Roll up dollops about the size of walnuts and place onto a greased cookie sheet.

  7. Press down lightly so they are not totally round. Leave room for the cookies to spread out as they cook.

  8. Bake for 12 to 15 minutes, depending on your oven.

  9. Cool on a wire rack and seal in airtight containers.
