delicious oaty cookie, originated from NZ and Australia during the WW1 (or 2!) when the mums made these cookies to send to their sons at the front lines in Europe, they keep really well in an air tight container.

Recipe Ingredients for Anzac Biscuits

1 cup flour
1 cup rolled oats
1 cup coconut
3/4 cup soft brown sugar
125 grams butter
1 teaspoon baking soda
2 tablespoons Golden Syrup
2 tablespoons water

Recipe Directions for Anzac Biscuits

  1. mix the dry ingredients together except for the baking soda.

  2. Gently melt the butter and golden syrup together on low on the stove.

  3. Mix the baking soda with 2 Tblsp of cold water and add to the melted hot butter/syrup mix, should froth up and smell delicious!

  4. pour the melted mixture over the dry mix and mix together.

  5. Roll into balls between your hands.. this bit makes your hands quite messy and greasy... flatten between palms of hands to about 1/2 inch thick

  6. place on baking tray, leaving enough room for the cookies to spread

  7. Oven at 180 C for 15-18mins

  8. Let cool on tray
