When serving a crowd, double recipe and bake the coffee cake in a 13x9x2 inch baking pan for 45 to 50 minutes. Can use 1 1/2 c chopped, peeled apples, apricots, peaches, pineapples or raspberries (don't simmer raspberries)

Recipe Ingredients for Any Fruit Coffee Cake

1 1/2 cups blueberries
1 cup sugar (divided)
2 tbsp cornstarch
1 3/4 cups flour (divided)
1/2 tsp baking powder
1/4 tsp baking soda
6 tbsp canola oil (divided)
1 egg
1/2 cup milk
1 1/2 tsp lemon juice (to make sour milk)
1/2 tsp vanilla

Recipe Directions for Any Fruit Coffee Cake

  1. In a saucepan combine fruit and 1/4 c water. Bring to boiling; reduce heat. Cover and simmer about 5 minutes or til tender. Combine 1/4 c sugar and cornstarch. Stir into fruit mixture. Cook and stir til thickened and bubbly. Cook and stir 2 more minutes. Set aside.

  2. In a mixing bowl stir together 1/2 c sugar, 1 1/2 c flour, baking powder and soda. Cut in 4 T canola oil til fine crumbs. Combine egg, sour milk and vanilla. Add to flour mixture. Stir till just moistened. Spread half of batter in 8x8x2 inch pan. Spread fruit over batter. Drop remaining batter in small mounds atop filling.

  3. Combine remaining 1/4 c sugar and 1/4 c flour. Cut in 2 T canola oil till fine crumbs. Sprinkle over batter.

  4. Bake in 350 degree oven for 40 to 45 minutes or till golden brown.
