Pantry pasta dish inspired by antipasta

Recipe Ingredients for Antipasta pasta

14 1/2 oz Ronzoni Smart Pasta
1 roasted red pepper
2 oz turkey pepperoni
8 oz fresh mozzarella
1 can artichoke hearts
14 1/2 oz Tomatoes Diced No Salt Added
1 t sea salt
1/2 t pepper
1 t italian seasoning
2 T red wine vinegar
1 t garlic
2 T fresh basil, minced

Recipe Directions for Antipasta pasta

Cook pasta with 1 T salt. Drain tomatoes into large nonstick skillet and add 2 T red pepper water - reduce by 2/3. Dice cheese and quarter pepperoni slices. Quarter artichoke hearts and dice red pepper. Add tomatoes, peppers, artichokes to reduced liquid and warm through. Combine vinegar, garlic, salt, pepper, and Italian seasoning - add to veggies with basil. Combine with pasta, cheese and turkey pepperoni.
