Vegetarian meat loaf! You can use any kind of beans you like or any leftover whole-wheat bread products you have on hand.

Recipe Ingredients for Anti-Meat Loaf

2 1/2 cup black beans
1 small white onion
2 cups cottage cheese
1 1/2 cups oatmeal
1 cup breadcrumbs
1 egg
1/10 cup sunflower seeds
4 oz can tomato sauce
4 tbsp ketchup
1 dash of hot sauce

Recipe Directions for Anti-Meat Loaf

  1. Preheat oven to 375 F. Spray a med. sized (9x6) baking pan with vegetable cooking spray. Set aside.

  2. In a food processor, blend whole wheat bread until fine, to get breadcrumbs. Line the bottom of the baking pan with a sprinkling of breadcrumbs. To clarify: Don?t use all your crumbs! Save the rest for the loaf ;)

  3. Chop your onion in halves and blend in food processor until relatively fine. Add beans, cottage cheese, egg and blend.

  4. Now is a good time to make the sauce. Simply mix your tomato sauce, ketchup and hot sauce in a small separate container. Drop a tablespoon or two (or three) of this mixture into the food processor.

  5. Add the oatmeal and blend?(not too long?that will mess up the loaf?s texture.) Sprinkle in sunflower seeds and mix in with spatula.

  6. With a spatula, transfer the mix into the pan and make even. Ladle the sauce on top until evenly spread.

  7. Now you can bake it! Pop it in the oven for about 45-50 minutes at 375 F. I recommend letting it chill in the refrigerator overnight: that way it will set and be extra delicious the next day!
