I haven't tried these yet either, so I don't know! But I'm sure they are fantastic!

Recipe Ingredients for Another Roni-Inspired Recipe: Spaghetti Squash Cakes

2 egg whites
1/4 cup whole wheat flour (30g)
2 garlic cloves
1 1/2 cups of cooked spaghetti squash
1/4 cup finely diced red pepper
1/4 cup finely diced green pepper
1/4 cup finely diced sweet onion
1/2 teaspoon curry powder
1/4 teaspoon cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon salt
1/4 teaspoon black pepper

Recipe Directions for Another Roni-Inspired Recipe: Spaghetti Squash Cakes

  1. Whisk the egg whites and flour in a large bowl to make the base batter.

  2. Grate garlic into the batter.

  3. Add the remaining ingredients and sprinkle with Salt and Pepper.

  4. Mix well, coating everything in the batter.

  5. Heat a large skillet over medium high heat.

  6. Spray with non-stick cooking spray.

  7. Using about cup of the batter, plop on the skillet and flatten it a bit with a spatula.

  8. Cook for about 3-5 minutes a side until the cake no longer sticks to the pan and becomes golden brown.

  9. Batter makes about 8 cakes as pictured.
