Recipezaar #314040 with substitutions. I just made these and they're a winner! There are a couple of extra steps (and bowls) involved while preparing, but for me the end result is worth it.

Recipe Ingredients for Another Bran Muffin Recipe

1 1/2 cups wheat bran
1 cup whole wheat flour
1 cup skim milk
1 tablespoon vinegar (added to skim milk above to make soured milk)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon vanilla extract
1/2 teaspoon salt
1/3 cup Splenda granulated
1/3 cup molasses
1/3 cup unsweetened applesauce
1 egg
1/4 cup raisins

Recipe Directions for Another Bran Muffin Recipe

  1. Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.

  2. Add skim milk to vinegar to make 1 cup soured milk and set aside for 5 minutes.

  3. Mix together wheat bran and soured milk; let stand for 10 minutes.

  4. Beat together applesauce, egg, Splenda, molasses and vanilla and then add to milk/bran mixture.

  5. Mix flour, baking soda, baking powder and salt.

  6. Stir flour mixture into bran/milk mixture, until just blended.

  7. Fold in raisins and spoon batter into prepared muffin tins.

  8. Bake for 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!
