A hearty healthy vegetable soup. Feel free to throw in any leftovers! Be sure to use two cans of tomatoes. If possible use low-sodium tomatoes and broth.

Recipe Ingredients for Another Basic Veggie Soup

2 canned tomatoes
1 cup chopped onion
4 cloves garlic, pressed
2 tablespoons olive oil
6 leeks, washed well, whites chopped
1/2 cup chopped celery
1 1/2 cups chopped carrots
6 cups chicken broth
1/4 of a head of cabbage
1/2 teaspoon thyme
1 salt and pepper to taste

Recipe Directions for Another Basic Veggie Soup

  1. In a large soup pot, heat the olive oil over medium-high heat; add the onion and cook till nearly translucent.

  2. Now add the garlic- but don't let the garlic brown! Saute' for another couple of minutes.

  3. Add remaining chopped veggies and saute' for just a minute or two- you're not cooking them- just extracting their wonderful flavor for your soup.

  4. Add thyme and salt and pepper to taste while saute'ing.

  5. Place veggies in a slow cooker; add tomatoes and broth.

  6. Cover and cook on low heat setting for 7 to 9 hours on on high setting for 4 to 6 hours.
