Good old fashioned Banana Bread recipe - uses buttermilk. If you don't have buttermilk, use milk and add 1 tsp. vinegar plus 1 tsp. baking soda. I love adding Pecans or Walnuts.

Recipe Ingredients for Another Banana Bread

1/2 c. brown sugar
1/2 c. sugar
1/2 c. unsalted butter (1 stick)
2 eggs
1/2 c. buttermilk
2 1/2 c. flour
3 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 ripe bananas (1 1/2 c. mashed)

Recipe Directions for Another Banana Bread

  1. Preheat oven to 325*. Oil & flour loaf pan.

  2. Cream butter and sugar. Add egg, then buttermilk.

  3. Combine flour and other dry ingredients: baking powder, baking soda and salt.

  4. Mash banana; set aside.

  5. Pour dry into wet. Using a folding motion, use spatula to fold dry into wet ingredients until all is moistened. Don't over mix. Fold in mashed banana.

  6. Pour into prepared loaf pan.

  7. Bake for an hour at 325*, until tester comes out clean. Let bread rest for 10 min. prior to lifting out of pan onto cooling rack. Cool completely before storing.
