This is based on Spoon River Cookbook's lentil barley soup, with cashews and spinach in place of the barley and kale, plus a few other variations according to what veg I had in the house. I used beluga lentils for this recipe, which gave a lovely color contrast to the deep green of the spinach and the bright red of the tomatoes.

Recipe Ingredients for Ann's Spoon River Cashew Variation Lentil Soup

1 cup Lentils
4 cups water
4 cups spinach
1 cup roasted cashews
28 oz tomatoes
3/4 cup tomato puree
4 cloves garlic
2 small onions
2 tablespoons soy sauce
12 baby carrots
3 Celery
1 teaspoon salt

Recipe Directions for Ann's Spoon River Cashew Variation Lentil Soup

  1. 1. Boil the lentils till almost starting to get soft.

  2. 2. Dry roast the raw cashews in a hot dry pan, turning CONSTANTLY (they will burn in an instant).

  3. 3. In soup pot, saute the alliums in oil.

  4. 4. Add carrots and celery to soup pot and saute till almost tender (or however you like your soup veg)

  5. 5. Add water, soy sauce, salt, tomatoes, tomato juice (from the tomatoes can), spinach, lentils, and cashews.

  6. 6. Simmer till you're ready to eat.
