This is a quiche recipe near and dear to my heart. My Step-mother, a middle-aged Scottish woman, created this recipe that proves to be fast and simple. It's great for a mom pressed for time or for entertaining guests. Give it a try!

Recipe Ingredients for Annmarie's Quiche

12 ounce frozen broccoli
12 ounce frozen spinach
1 pie crust
5 eggs
2 cup grated sharp cheddar cheese

Recipe Directions for Annmarie's Quiche

  1. Set out frozen vegetables a few hours before baking. When vegetables are thawed drain out excess water.

  2. Preheat oven to 400 degrees. In a bowl, mix eggs, broccoli, spinach, and cheese. After pressing pie crust to pie dish pour contents of bowl into the dish.

  3. Throw out (or save for another quiche!) remaining ingredients. Put dish in oven for 40 to 50 minutes. When quiche is golden brown on top remove from oven.

  4. Serve immediately to 8 to 12 people. I Hope you enjoy!
