Recipe Ingredients for Anne's fritata

100 g flour
8 eggs
1 cup milk, skimmed
250 g mushroom
2 medium tomato
1 large courgette
2 medium onions
1 tbsp oil
1 salt, pepper and herbs to taste.

Recipe Directions for Anne's fritata

  1. Slice all the vegetables and steam, bake or microwave them until allmost tender.

  2. Preheat the oven at 200°C

  3. Mix the flour, oil, milk and eggs with the desired salt, pepper and herbs.

  4. Grease a bakingtray and slide the vegetables in this tray.

  5. Pour the eggmixture over the vegetables.

  6. Bake at 200°C for 15 minutes. Reduce the heat to 170°and let bake an other 20 minutes.

  7. Can be served as is or with a slice of bread or with noodles or potatoes.

  8. You can use all vegetables available depending the season or contents of your fridge.
