A GREAT way to welcome the Fall season! These are amazing any time of the year though...so don't wait! :)

Recipe Ingredients for Anna?s Pumpkin Pancakes

2 c flour
2 tbsp brown sugar
1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp salt
1 tsp cinnamon
1 tsp baking powder
2 egg whites, beaten
1 1/2 c skim milk
2 tbsp oil
1/2 c canned pumpkin

Recipe Directions for Anna?s Pumpkin Pancakes

  1. Mix first 7 ingredients in a large mixing bowl.

  2. Mix last 4 ingredients in a small mixing bowl.

  3. Add small bowl mixture to large bowl. Stir until just moistened. Place on hot griddle and enjoy.

  4. *I didn't have nutmeg or ginger, so I substituted a whole teaspoon of pumpkin pie spice instead. I still kept the same amount of cinnamon as called for.

  5. *Also, I put just a little bit of butter and syrup on the pancake, then placed a spoonful of cool whip on top then sprinkled it with pumpkin pie spice. Too good for words. (Just be sure to adjust the calories accordingly)
