2 zucchini
28 ounce tomatoes
2 cups corn
1/4 cup Parmesan cheese, grated

Recipe Directions for Ann Picciallo's Good Stuff

  1. Wash zucchini, cut off ends, cut in half, dic, place in saucepan with stewed tomatoes.

  2. Cook over low heat until zucchini looks glassy, mushy and translucent.

  3. When zucchini looks approx. half done, add corn.

  4. Top with grated cheese for last 10 minutes.
