Anita's Vegetarian Lasagna Recipe

I used 9 strips of healthy harvest wheat lasagna pasta. Use 3/4 cup low fat ricotta. Use 1 cup mozzarella. Use 1 1/3 cup crumbles.

Recipe Ingredients for Anita's vegetarian lasagna

1 egg
2 cup spinach
4 cup zucchini, sliced
2 1/2 cup mushrooms, sliced
168 g pasta
2 cups tomato sauce
1/4 cup green onions
1/4 cup parsley
1 onion, chopped
120 g light ricotta cheese
4 ounces 2% cottage cheese
96 g 2% mozzarella cheese
110 g morning star crumbles

Recipe Directions for Anita's vegetarian lasagna

  1. 8x8 dish

  2. preheat oven to 350 degrees

  3. divide tomato sauce into 3 bowls

  4. saute vegetables until tender

  5. combine ricotta cheese and egg

  6. put tomato sauce in bottom of dish

  7. spread 3 strip layer of pre cooked lasagna in bottom

  8. mix meat with tomato sauce and veg spread even layer

  9. spread layer of ricotta

  10. cover with 3 strips pasta

  11. repeat then cover woth 3 strips pasta

  12. spread remaining tomato sauce on top

  13. cook for 45 minutes covered with foil

  14. remove foil

  15. spread layer of mozzarella

  16. bake 10-15 minutes uncovered (or until brown)
