Makes 6 servings



use 1 cup soy milk. Add 1/4 cup of splenda. I couldn't get the caloric content right so add 24 calories to whole pie or 4 calories a slice. Use one cup of pumpkin.

1/2 cup 2% cottage cheese
10 ounce canned pumpkin
5 ounce light vanilla soy milk
1 egg
1 teaspoon cinnamon
1/2 tsp pumpkin spice

  1. Beat eggs add pumpkin, cottage cheese, splenda, spices slowly add milk

  2. bake at 425 for 15 minutes the turn down to 350 for 40
