Meatless version of the classic stuffed peppers.

Recipe Ingredients for Angi's Stuffed Peppers

4 red peppers
5 servings Boca ground burger
1 1/2 cups cooked white rice
1 1/2 cups organic diced tomato
1 white onion
4 cloves garlic
1/4 tsp basil
1/4 tsp oregano
2 tbsp olive oil
1 salt and pepper to taste

Recipe Directions for Angi's Stuffed Peppers

  1. Boil peppers (any color) for 5 minutes in salt water.

  2. Saute onion and garlic in olive oil.

  3. Add meatless burger (2.5 cups), rice (brown or white), tomatoes, and spices to onion and garlic, along with a cup of water.

  4. Simmer for 15 minutes.

  5. Stuff mix into peppers.

  6. Place in non-stick baking pan and bake at 350 degrees for 25 minutes.

  7. Top with shredded cheese if desired.
