Yams or sweet potatoes and apples.

Recipe Ingredients for Angie's Yams

6 cups yams, peeled and cut into 1 inch cubes
2 medium apples, cut into 1 inch cubes (Granny smith are good)
2 tbsp orange juice, fresh squeeze over cut up veges and fruit
1 small red onion, cut into cubes
1 tbls olive oil, mix into vegetables and fruit
1 tsp salt, to taste may not be a tsp
1 tsp black pepper, to taste use quite a bit
1/4 tsp ground cinnamon, to taste
1 Cooking Spray, coat sides and bottom of baking dish

Recipe Directions for Angie's Yams

Cut up yams, apples and onions and place in bowl. Sprinkle the vegetables and fruit with 1 T olive oil and stir. Squeeze approx. 2 T of fresh oragne juice over fruit and vegetables to keep from browning. Add salt to taste, pepper to taste (though use a lot) and cinnamon. Spray sides and bottom of baking dish. Place contents in baking dish. For best results cover bottom of baking dish with 1 crowded layer. Bake at 375 for approx. 30 minutes. using a spatula, flip everything o ver and then bake for another 25 minutes. It is done when the yams are tender when poked with a fork.
