Recipe Ingredients for Angie's Fabulous Italian Pot Roast

6 1/2 lbs beef, arm roast
1 onion, large
2 tbs garlic, minced
374 ml wine, red
1 cup water
2 tsp salt, kosher
1/2 tsp oregano
1/2 tsp thyme
1/2 tsp rosemary
1/2 tsp sage
1/2 tsp marjoram
1/2 tsp basil
4 stalks celery
2 cups carrots, baby
1 lb red potatoes
1 lb Yukon gold potatoes

Recipe Directions for Angie's Fabulous Italian Pot Roast

  1. Salt & brown the roast on all sides.

  2. Place roast in a slow cooker or in a dutch oven.

  3. Cut up all veggies and put in with the roast.

  4. Mix together all herbs (I use a couple tsp of the premixed Italian Seasoning.) and garlic with wine and water and pour over roast and veggies.

  5. If you are using a slow cooker, set on high and cook 6-8 hours or set on high for a couple hours and turn back to low if you have all day (or all night) to cook it.

  6. If you are using your oven, cook at 350 degrees for several hours depending on the weight, until meat is fork tender.

  7. About 2+ hours before you are ready to eat put in the potatoes.
