This is a delicious version of the popular Morning Glory muffins, as found on eatingwell.com.

Recipe Ingredients for Angie G's Morning Glory Muffins - Eatingwell.com

2 cups whole-wheat flour
3/4 cup sugar
1 tbl ground cinnamon
1 tsp baking powder
1 tsp baking soda
2 cups carrots, grated
1 apple, finely chopped
1/2 cup dried cranberries
1 large egg
2 large egg whites
1/2 cup apple butter
1/4 cup canola oil
1 tbl vanilla extract
2 tbl pecans, finely chopped
2 tbl wheat germ

Recipe Directions for Angie G's Morning Glory Muffins - Eatingwell.com

  1. Preheat 375

  2. Whisk all dry ingredients together

  3. Stir in carrots, apple and dried cranberries

  4. Whisk the remaining wet ingredients together in a separate bowl.

  5. Make a well in the dry ingredients and stir in the wet ingredients with a rubber spatula until just combined, stir in the pecans and wheat germ

  6. Bake 15-25 minutes, let cool in the pans for 5, and turn onto a wire rack to cool.
