Black beans & rice with citrus tilapia

Recipe Ingredients for Angie G's costa rican tilapia (from Food Netwook.com)

2 lbs tilapia
1 1/2 cup pineapple
3/4 cup black beans
3 tbl lime juice
2 tbl orange juice
1 tsp sugar
3 cloves garlic
3 tbl cilantro
1 cup long grain brown rice
2 cups salsa

Recipe Directions for Angie G's costa rican tilapia (from Food Netwook.com)

  1. Marinate fish in garlic and citrus juice for 20 minutes

  2. Meanwhile prepare the rice according to package

  3. Once rice is done, add pineapple, salsa and black beans, transfer to a 9x13 baking dish

  4. Place fish on top and cover w/marinade

  5. bake at 350 for 25 minutes or until bubbley and fish is cooked through
