A delicious blend of whole grain pasta and bright veggies

Recipe Ingredients for Angelica's Cold Pasta Salad

13 1/4 oz Whole wheat pasta
12 ounces cherry tomatoes
6 oz canned artichokes
3 1/2 oz kalamata olives
3/4 medium red pepper
1 yellow pepper
2 tbsp red onion, minced
2 cups arugula
1 tbsp olive oil
1/4 tsp cracked black pepper
1/2 tsp salt

Recipe Directions for Angelica's Cold Pasta Salad

  1. Cook the pasta, and then cool it in very cold water

  2. thinly slice red peppers, onions, and olives. Add them them to the pasta in a 13x5 dish

  3. cut the tomatoes in half and add them to the mix

  4. add the arugula artichokes and salt

  5. add olive oil and mix well

  6. chill for an hour and then eat it!
