Use egg whites not used in German Gold Poundcake!

Recipe Ingredients for Angel Food Cake

1 1/4 cup confectioner's sugar
1 cup cake flour
1 1/2 cups egg whites, at room temperature (12 to 14 eggs)
1 1/2 tsps cream of tartar
1 1/2 tsps vanilla extract
1/4 tsp salt
1/4 tsp almond extract
1 cup sugar

Recipe Directions for Angel Food Cake

  1. Preheat oven to 375

  2. In small bowl, stir confectioner's sugar & flour; set aside

  3. Add egg whites, cream of tartar, vanilla extract, salt & almond extract to large bowl and, with mixer at high speed, beat until well mixed

  4. Beating at high speed, sprinkle in sugar, 2 tbsps at a time; beat just until sugar dissolves and white form stiff peaks

  5. Do not scrape bowl during beating

  6. With rubber spatula, fold in flour mixture, about 1/4 at a time, just until flour disappears

  7. Pour mixture into ungreased 10-inch tube pan and with spatulat, cut through batter to break any large air bubbles

  8. Bake 35 minutes

  9. Invert cake in pan on funnel; cool completely

  10. With spatula, loosen cake from pan & remove to plate
