Recipe Ingredients for Angel Biscuits

3/4 tsp dry yeast
3 tbsp warm water
1/4 cup buttermilk
6 tbsp shortening
1 3/4 cups flour
1 1/2 tbsp sugar
1 1/4 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt

Recipe Directions for Angel Biscuits

  1. Preheat oven to 425 F. Line a baking sheet with parchment paper.

  2. Stir together yeast and warm water in a small bowl and let stand for 5 minutes, or until the yeast foams. Add the room temperature buttermilk and melted shortening.

  3. Sift the dry ingredients into a mixing bowl. Make a well in the center of the flour mixture.

  4. Add the yeast-buttermilk mixture to the flour mixture and stir by hand just until moistened.

  5. Turn out onto lightly floured surface, press into a ball, and knead once or twice.

  6. Roll out to 1/2 inch thickness. Cut out bisquits using a 2 inch cutter. Gather scraps, reroll and cut.

  7. Place the biscuits on the sheet about 1 inch apart, and brush the tops with an egg white wash (2 egg whites/1 tbsp cold water). Let rise until nearly doubled, about 20 minutes.

  8. Bake at 425 until tops are golden brown, 12-14 minutes

  9. Serve hot.
