My boyfriend makes a mean Portuguese Caldo Verde! Since he cooked it and I HAD to eat it, I twisted his arm to tell me his super simple recipe so I could input here to figure out the calories and such. He adds a few dashes of Mrs. Dash as well, but I can't find a way to make this form register it. Unfortunately, it's really high in sodium as it is. I'll see if he will omit the salt he adds in next time he makes it. But you can omit the salt when you make it =)

Recipe Ingredients for Andy's Caldo Verde

12 cups Water
14 ounces Chorizo (8 links, 2pkgs Goya brand)
55 ounces Kale, shredded (1 bunch)
8 medium Russet Potatoes
0.01 ounces Bay Leaves (2 leaves)
2 tsp Salt
1 tbsp Pepper

Recipe Directions for Andy's Caldo Verde

  1. Bring water to a boil.

  2. Cut slits lengthwise into chorizo.

  3. Add seasonings and chorizo to boiling water, cook for 30 minutes.

  4. Remove chorizo, let sit so the juice can redistribute.

  5. Add potatoes to water and cook until they fall apart, approx 30 mins

  6. Mash the potatoes (do not remove from pot)

  7. Cut chorizo into bite size pieces.

  8. Add kale and chorizo to water, cook for 30 - 40 minutes.
