This is a flexible recipe - you can make it with half white flour, or substitute up to a cup of white bean flour. The original uses 2/3 cup of oil, and 1/4 cup of honey. I've subbed a second egg or 1/4 cup of eggbeaters and more water to keep the fluid the same. You could sub nonfat plain yogurt for the rest of the oil to further cut the fat.

Recipe Ingredients for Andrea's Whole Wheat Bread - lowfat version

6 1/2 cups whole wheat flour
1/4 cup molasses
1/2 tbsp brown sugar
1/4 cup water
1 1/2 tbsp yeast
1/2 cup egg beaters
1/6 cup oil
2 7/8 cups water

Recipe Directions for Andrea's Whole Wheat Bread - lowfat version

  1. Mix yeast, 1/4 cup water and brown sugar.

  2. Mix 3.5 cups whole wheat flour with 2.5 cups water, mix for 2 minutes on medium.

  3. Add yeast mixture to flour mixture and mix until blended.

  4. Add the rest of the liquids, mix until blended.

  5. Add the rest of flour, mix in, then knead 10 minutes either in the mixer or by hand.

  6. Let rise until double.

  7. Form 2 loaves, rolls or other shapes.

  8. Let rise again until double.

  9. Bake 30 minutes at 350 degrees.
