Recipe Ingredients for Ancho Oatmeal Raisin cookies - vegan

1 1/2 cups old fashioned oats
1 cup raisins
3/4 cup whole wheat flour
1/2 cup applesauce
1 banana
1/2 cup brown sugar
1/2 cup light olive oil
1/4 cup water
2 tbs vanilla
2 tbs poblano pepper, dried
2 tbs cayenne pepper
1 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg

Recipe Directions for Ancho Oatmeal Raisin cookies - vegan

  1. Combine dry ingredients flour, baking powder, and spices with a whisk. Stir in oats and fruit/nuts.

  2. In a separate bowl, mix oil, water, brown sugar, and vanilla with an electric mixer until smooth.

  3. Stir in dry ingredients, combining thoroughly.

  4. Spoon onto un-greased baking sheet and flatten slightly.

  5. Bake at 375 degrees for 15 minutes, until the edges just begin to brown.
