This is a great recipe for getting in your spinach and broccoli withouth knowing it!

Recipe Ingredients for Anat's Lasagna

1 lb lasagna noodles
3 cups broccoli, chopped
1 tbsp finely chopped shallot
4 cups spinach, finely chopped
28 oz ground beef
30 oz Ricotta cheese, part skim
1 tbsp oil
1 tsp paprika
1 tsp salt
5 cloves garlic, finely chopped
3 tsp parmesan cheese, finely grated
1/2 cup parmesan cheese, grated
2 oz shredded mozarella cheese
26 oz pasta sauce
25 1/2 oz organic tomato basil pasta sauce
13 1/4 oz canned mushrooms, peices & stems

Recipe Directions for Anat's Lasagna

  1. cook lasagna noodles.

  2. mix the cheese filling: spinach, ricotta cheese, salt, garlic, parmesan (3 tsp),

  3. cook the ground beef until brown.

  4. mix the sauce: brocolli, shallots, cooked ground beef, oil, paprika, sauces, mushrooms

  5. in a large pan place some sauce then a layer of noodles, then cheese filling, then a sauce again, sprinkle a bit of the parmesan and mozarella... then repeat with noodles, cheese, and sauce, sprinkle with cheese. End with a layer of noodles and then cover with a layer of sauce (and sprinkle with cheese) so the noodles don't overcook.

  6. cook at 350F for about 35 minutes covered with foil. the last 5 min uncover to let crisp. Let cool slightly and enjoy!
