Recipe Ingredients for Amy's Mandarin orange cake


Cake:
2 cups sugar
2 cups flour
2 eggs
2 tsp baking soda
1/2 tsp salt
22 oz mandarin oranges, drained

Glaze:
3/4 cup brown sugar
3 T milk
2 T butter

Recipe Directions for Amy's Mandarin orange cake

  1. Preheat oven to 350 degrees. Grease ( I use Pam) and flour a 13 X 9 in baking pan. Beat eggs, then oranges on low speed. Add dry ingredients ( above the line) and beat low speed for 4 minutes. Put mixture into greased and floured 13 X 9 in pan. Bake at 350 degrees for 30 -35 min. Use the toohpick test for doneness.

  2. While it is at the last 10 min: In a heavy saucepan combine the brown sugar, milk, and butter until boiling and bubbly over med-high heat then pour over HOT, finished cake.

  3. When cool, cut into 15 pieces for portion control.
