Easy to make for lunchtime sandwiches

Recipe Ingredients for Amy's Egg Salad

6 eggs
2 egg whites
3 tbsp low-fat mayonnaise
1 tbsp chives, chopped
1 tsp mustard
1 tsp salt

Recipe Directions for Amy's Egg Salad

  1. Boil eggs, remove from shells and slice into small pieces. Remove the egg yolks from two of the eggs before slicing.

  2. Mix eggs, mayonnaise, mustard and chives together.

  3. Add salt and pepper to taste.

  4. Let chill for a few hours before serving.
