Recipe Ingredients for Amy's Chicken Enchilada Casserole

8 oz Doritos
1 can cream of mushroom soup, reduced fat
1 can cream of chicken soup, reduced fat
1 can evaporated milk, fat free
3 lbs chicken breasts
15 oz. ro-tel tomatoes
1 lb cheddar cheese, fat free
1 green pepper
1 onion

Recipe Directions for Amy's Chicken Enchilada Casserole

  1. Arrange chips in bottom of buttered oblong casserole dish.

  2. Mix together all liquids;

  3. Add chopped green pepper and onion;

  4. Alternated layers of chicken and liquid.

  5. Cover top with cheese and refridgerate 24 hours.

  6. Bake 1 hour at 350 degrees.
