Recipe Ingredients for Amy's Black Bean Soup

1 cup dried black beans
2 stalks celery, sliced
2 roma tomatoes, diced
4 cloves garlic, minced
1 yellow onion, diced
1/2 cup fresh cilantro
1 1/2 tablespoon dried basil
1 tablespoon oregano
1/4 cup scallions
1 red pepper, sliced
6 cups water
1 salt and pepper

Recipe Directions for Amy's Black Bean Soup

  1. soak beans: boil beans in water to cover them 2 inches. remove from heat and let stand at least one hour.

  2. put all ingredients in crock pot and allow to cook until beans are tender, around 4 hours
