Chicken and black bean enchiladas

Recipe Ingredients for Amy and Rob's Enchilada Pie

1 lbs chicken breast (boneless, skinless)
16 oz black beans
28 oz enchilada sauce (Green style)
12 corn tortillas
1 large onion (diced)
2 tbs chili powder
1 tsp cumin
1 tsp salt
1 tbs garlic powder
2 lbs cheddar cheese (shredded)

Recipe Directions for Amy and Rob's Enchilada Pie

  1. pan fry the chicken breast until brown

  2. chop up and shred the chicken

  3. add black beans, half of the enchilada sauce, and half of the cheese and mix together

  4. add in the diced onion, chili powder, cumin, garlic powder and salt and mix together

  5. take one 12" x 9" steam pan and spray with non-stick coating (PAM)

  6. layer with tortillas

  7. layer with half of the meat mixture

  8. layer with one third of the remaining cheese

  9. drizzle with one third of the enchilada sauce

  10. layer with four tortillas

  11. layer with remaining half of the meat mixture

  12. layer with one third of the remaining cheese

  13. drizzle with one third of the enchilada sauce

  14. layer with last four tortillas

  15. layer with last third of the remaining cheese

  16. drizzle with the rest of the enchilada sauce

  17. garnish with sliced olives (optional)

  18. bake in 350 degree oven for 35 to 45 minutes until cheese is throughly melted and lightly browned
