Recipe Ingredients for Amish Potato Soup

1/4 cup butter
1/4 cup flour
1/4 cup chopped onion
2 stalks chopped celery
1 lb. ham
4 cups shredded potatoes
6 cups 2% milk
1 cup American cheese

Recipe Directions for Amish Potato Soup

Cook vegetables together with water to cover until tender. In a separte kettle, melt butter, then add 5 cups mulk. While milk heats, make a thickening with flour and remaining milk. Add to hot milk and when it comes to a boil, add vegetables. Add ham and cheese, salt & pepper to taste. Stir until cheese is melted. Do not drain vegetables before adding white sauce.
