spaghetti squash stuffed with chicken sausage tomato sauce

Recipe Ingredients for Amelia's stuffed squash

2 lbs. spaghetti squash
12 oz. chicken, ground
1 1/2 cups tomato sauce
1 clove garlic
1 cup mushrooms, chopped
1 cup onion, diced
1 tablespoon olive oil
2 tablespoons parmesan cheese, grated

Recipe Directions for Amelia's stuffed squash

  1. cut squash in half, wrap in plastic wrap and microwave for 8 minutes, cool afterwards

  2. sautee onion, mushroom, chicken sausage (sliced) and garlic in 1 tblsp olive oil

  3. add tomato sauce

  4. scrape squash from shell and add to sauce

  5. stir to combine

  6. spoon mixture back into squash shells and sprinkle with 1 tablespoon parmesan cheese each

  7. bake at 400 degrees for 20 minutes

  8. cut each shell in half and serve
