Delicious vegetarian/vegan chili! Serve with cornbread muffins (not sweet!) or top with sour cream. VERY filling, and albeit a little high in calories.. But look at that fiber AND protein! (And they say vegans/vegetarian don't get enough! ;3) [Note #1: When using canned beans and corn, make sure to rinse them off and remove the juice inside the can(s). It will lower the sodium content (not shown above) and leave a cleaner taste. The fresher tasting, the better!] [Note #2: I say this recipe is sugar-free based on the fact it only has minimal amounts of sugar from the corn.]

Recipe Ingredients for Amber's Amazing Chili!

28 oz crushed tomatoes
15 oz black beans
15 oz dark red kidney beans
1 cup frozen corn
1/2 cup TVP
4 cloves garlic, minced
1 red onion, diced
1 poblano pepper, diced
1 cup carrots, chopped
3 tablespoons chili powder
1 tablespoon ground cumin
1/2 tsp sea salt
1 tsp black pepper

Mix everything together, and simmer away! The longer it simmers, the better the taste.. and the thicker it'll become.
