Recipe Ingredients for amazing veggie, tofu and shrimp pasta

7 tbsp olive oil
12 ounces whole wheat pasta
5 ounces asparagus
5 ounces broccoli
4 plum tomatoes, chopped
1 medium onion, chopped
3 cloves garlic, minced
1 medium green bell pepper, chopped
3 tsp salt
1 tsp pepper
1 ounce parmesan cheese
1/2 lbs shrimp
6 ounces tofu, cubed
2 tsp garlic powder
2 tsp onion powder
1 tsp red pepper flakes
750 ml white wine

Recipe Directions for amazing veggie, tofu and shrimp pasta

  1. chop all of the veggies and tofu

  2. peel the shrimp and cut them in half if they are large

  3. pre-heat a pan to medium heat with about 2 tbsp of olive oil and add the onion as well as salt and pepper, saute for about 8-10 minutes until they are tender then add the garlic and bell pepper and cook for another 5 minutes add a little more salt and pepper add more olive oil as needed

  4. bring a pot of water to a boil and add the pasta ( I use whole grain pasta -but you can use whichever)

  5. add 2 tbsp of olive oil, the broccoli, asparagus and tomato and cook for an adition 10 minutes or until the veggies are almost cooked. salt and pepper the veggies as needed

  6. Add garlic powder, onion powder and red pepper flakes

  7. Add the pasta to the water and cook as directed

  8. pour an entire bottle of wine in with the veggies and raise the heat to medium-high. Add the shrimp and tofu and let the wine reduce down

  9. Once the pasta is done drain it and return to the pot

  10. use a slotted spoon to transfer the veggies into the pasta, once there is only wine left in the pot raise the heat until it becomes thicker. Then add to the pot with veggies along with a couple tbsp's of olive oil

  11. In each individual bowl add a little grated parmesan cheese with a sprinkle of olive oil
