chili that i made when i tried being vegan for a week

Recipe Ingredients for AMAZING veggie chili

15 ounce soy beans
15 ounce kidney beans
15 ounce pinto beans
28 ounce whole tomatoes
28 ounce diced tomatoes
4 tbsp olive oil
1 large onion, chopped
1 medium green bell pepper, chopped
1 small red bell pepper, chopped
2 cloves garlic, minced
6 ounces mushrooms
1 1/2 tbsp salt
1/2 tbsp pepper
1 tbsp cumin
1 tbsp chili powder
1 tbsp paprika

Recipe Directions for AMAZING veggie chili

  1. heat pot to medium and add 4 tbsp of olive oil (guesstimate)

  2. add chopped onion and bell peppers - then season with salt and pepper and let cook for about 5-10min (when they begin to get tender)

  3. add mushrooms and garlic and cook for another 5 minutes

  4. drain and rinse the beans and add to the pot add all the tomatoes and add seasonings

  5. let cook for about an hour
