A very tasty sweet and spicy split pea soup.

Recipe Ingredients for Amazing vegetarian split pea soup

3 carrots
1 yellow onion
3 cloves garlic
1 tbsp olive oil
16 oz split peas
1/4 tsp cumin
1/2 tsp caraway seeds
1 tsp basil
1/2 tsp oregano
1/4 tsp cayenne
1/4 tsp bay leaves
2 l water

Recipe Directions for Amazing vegetarian split pea soup

  1. Saute the carrots (sliced), onions (diced), and garlic (minced) in olive oil until onions are translucent.

  2. Add split peas and 1 L water. Stir in all spices (careful with the cayenne- 1/4 tsp makes it rather spicy).

  3. Cook for 1 hour, 20 minutes. Add more water as needed for desired consistency. Add salt and pepper to taste.
