60 g onion, chopped
3 cloves garlic, minced
1 tbsp olive oil
6 cups water

1 cup apple juice
14 1/2 oz stewed tomatoes (undrained can)
265 g sliced celery
165 g carrots, sliced
89 g apple, peel removed
235 g sweet potato, peel removed
375 g cabbage, chopped
275 g green beans
1/2 tsp coriander, ground
1/4 tsp black pepper

Recipe Directions for Amazing Vegetable Soup

  1. Cook onion and garlic in olive oil until tender. Add water, bouillon, apple juice, canned tomatoes, celery, carrots, apple, and sweet potato. Bring to boiling; reduce heat. Simmer, covered, for 20 minutes.

  2. Add cabbage, beans, coriander, and pepper. Return to boiling; reduce heat. Simmer, covered, until veggies are tender.
