Recipe Ingredients for Amazing Mock Mashers

4 cups cauliflower
1/4 cup grated parmesan
1 T light cream cheese

Recipe Directions for Amazing Mock Mashers

  1. Boil cauliflower in chicken broth or seasoned water for 10 minutes or until tender.

  2. Drain and put into food processor bowl fitted with chopping blade.

  3. Pulse until roughly chopped and add cream cheese and parmesan. Run until smooth.

  4. Add salt and pepper to taste, pulsing in until mixed. Use Butter spray or butter if not calorie restricted.
