Meatballs! Meatballs! Use sirloin beef -- it is the leanest. Serve over baked spaghetti squash as a low carb version of spaghetti and meatballs.

Recipe Ingredients for Amazing Meatballs

1 pound ground beef
1 egg
2 tablespoons parmesan cheese
1 tablespoons parsley, fresh
1 teaspoon oregano, dried
2 tablespoons basil, fresh, chopped finely
1 cup onion, chopped
3 slices bread, low carb bread
1 1/2 cups water

Recipe Directions for Amazing Meatballs

  1. Preheat oven to 350F.

  2. Chop onion, parsley, basil, oregano, parmesan cheese 1 tablespoon salt and 1/2 teaspoon pepper in blender.

  3. Add to meat mixture. Knead water and blended mixture into meat. Toast bread and make bread crumbs in blender.

  4. Add to mixture until smooth with no grittiness.

  5. Cover bottom of dish with beef broth or tomatoe sauce of choice.

  6. Bake for 1 hour with covered lid or foil. The best meatballs you have ever experienced.
